Here’s a fun recipe with all the healthy goodness of Manuka Honey! Enlist your kids to help you and unleash your creativity with the cupcake decorations! We had fun crafting ours with mini Easter eggs and bunny ears.
- ¼ cup butter softened
- ¾ cup Manuka Honey
- 2 eggs
- ½ cup plain yogurt
- 2 cups plain flour
- 1 tbsp baking powder
Manuka Honey Cream Cheese Frosting
- 1 lb. (16 oz.) cream cheese
- 1/2 cup Manuka Honey
- 1 tsp. vanilla extract
- A few drops of lemon juice
- Food coloring of your choice (optional)
- Candied bunny ears, mini Easter eggs or chocolate bunnies for decoration
Preheat oven to 350°. Prepare a 12-cup baking tray by lining it with cupcake cases. In a large bowl, cream butter and sugar until almost white. Add Manuka Honey, eggs and buttermilk, then mix until well blended. In a medium bowl, sift flour and baking powder. Add to Manuka Honey mixture and mix thoroughly until combined.
Fill cupcake cases up to 2/3 with the mixture. Bake until an inserted skewer comes out clean. (Approx. 18-20 minutes)
Transfer to cooling rack. Allow cooling completely before icing.
Cream together all ingredients until well blended. Decorate as you wish. Happy Easter!
